6 medium tomatoes
* pulp from 6 tomatoes
1 cup plain dry bread crumbs
1 (0.5 oz.) package Mayacamas Pesto Sauce Mix
3 tablespoons olive oil
2 tablespoons pine nuts, optional
1/2 teaspoon black pepper
Heat oven to 375 degrees F.
Cut tops off tomatoes. Remove seeds and veins with a spoon, reserving pulp for stuffing. Chop pulp removed from tomato. Mix in a bowl with bread crumbs and remaining ingredients.
Stuff tomatoes with pesto mixture. Place in a baking dish. Bake 15 minutes.
