4-6 tilapia fillets
1/2 cup H-E-B Southwest Marinade
1 bag, frozen H-E-B Steamable Spanish Rice
2 cups frozen H-E-B Fajita Syle Vegetables
2 1/2 tbsp. H-E-B Olive Oil
Pre heat oven to 425 degrees F.
Place Tilapia fillets and marinade in a 1 gallon zipper storage bag.Set aside for 10-15 minutes.
Spray a 9x9 inch baking dish with non-stick cooking spray. Sprinkle rice evenly over bottom of dish.
Once fish has marinated, lay fillets over rice in a single layer, drizzle remaining marinade over fish fillets. Bake for 15 minutes.
While fish is cooking, sauté fajita vegetables in olive oil until tender and browned, season with salt and pepper to taste.
Remove fish from oven, spoon sauted veggies over fillets and serve.
