dried fettuccine, spaghetti or linguini

H-E-B Reserve Extra Virgin Olive Oil

minced garlic

tsp. (or more, as desired)
hot or sweet red pepper flakes

cans (6 oz.)
tuna packed in water, drained

bag
fresh spinach or arugula
1
lemon, for juice

salt and pepper

freshly shredded Parmesan cheese
![]() Instructions ![]() Cook pasta in boiling water according to package directions.
![]() While pasta cooks, heat olive oil in a large skillet on medium heat. Add garlic and hot pepper flakes sauté 2 minutes. Add tuna and shred with a fork. Turn heat to low and keep warm.
![]() Just before the pasta is ready, set aside 1 cup of hot cooking water; drain pasta and return it to the cooking pot. Add the tuna mixture and fresh greens. Toss to mix, then add some of the reserved pasta water to thin to desired consistency. Add fresh lemon juice, salt and pepper, to taste. Divide among plates or pasta bowls, garnish with Parmesan cheese and serve immediately.
