Ingredients

2 (12 oz. each) H-E-B Pork Tenderloin

• salt and pepper

1 lemon, peeled, grated and juiced

1 Tbsp. grated fresh ginger

2 garlic cloves, chopped

6 green onions, cut into 2-inch sections

1 bag (6 oz.) H-E-B Dried Apricots, thin sliced

1 Tbsp. H-E-B Dijon Mustard

1/2 c. H-E-B Orange Juice

Instructions


Season pork with salt and pepper. Heat heavy bottom skillet over high heat 3 minutes. Spray skillet with non-stick cooking spray and quickly brown pork on all sides (about 2 minutes per side). Place in crock pot and top with grated lemon peel and juice, ginger, garlic, green onions, apricots, Dijon mustard and orange juice.

Cover and cook on high heat 4 1/2 hours. Cut pork loin into 1-inch slices.
