6 to 8 H-E-B ready fresh go cloves garlic peeled and halved
1/2 c. slivered almonds
3/4 c. extra virgin olive oil
1 1/2 c. each: fresh basil leaves and shredded H-E-B parmesan cheese
1 (16 oz.) pkg. H-E-B cappelini
1 (16 oz.) pkg. each: Hill Country Fare large tail-on cooked shrimp and H-E-B baby pea blend vegetables
Combine garlic, almonds, olive oil, basil leaves and Parmesan cheese in a food processor or blender bowl.
Process this pesto mixture for 30 seconds or until the almonds and garlic are chopped into a chunky smooth pesto.
Season basil pesto with salt and fresh cracked pepper to taste and place in a large pasta bowl and set aside.
Cook pasta according to package instructions, but after 4 minutes of cooking time add the frozen Hill Country Fare Large Cooked Shrimp and baby pea blend vegetables.
Cook the pasta mixture for 4 more minutes.
Drain pasta-shrimp mixture and add to pesto mixture.
Toss to coat, season to taste with salt and Pepper; serve immediately and enjoy.
