3 eggs, beaten
1 cup corn oil
1 teaspoon vanilla
2 cups shredded zucchini
1 1/4 teaspoon salt
2 cups sugar (brown or white)
2 cups flour
1 tablespoon cinnamon
1 1/2 teaspoon soda
1 cup chopped nuts
1 1/2 teaspoon baking powder
Preheat oven to 400 degrees.
Coat muffin pan with vegetable spray.
Combine eggs, oil, vanilla and zucchini.
Add remaining ingredients and stir until moistened.
Fill muffin cups two thirds full.
Bake 18 minutes
