2  H-E-B Large Grade A Eggs, beaten

2  Tbsp.  chopped fresh basil

1/4  tsp.  crushed red pepper

3  c.  Hill Country Fare All-Purpose Baking Mix

2  c. (2 medium)  shredded zucchini

1  c.  shredded H-E-B Cheddar Cheese, regular, 2% or fat free


Heat oven to 400°F. Heavily spray a 2-quart baking dish with nonstick cooking spray and set aside.

In a large bowl, combine eggs, basil, red pepper, 1 cup water, baking mix, zucchini, and cheese. Spread the batter evenly in prepared baking dish and bake on center oven rack for 25 minutes. Remove from oven and cool for 5 minutes. Remove from pan and cut into 12 squares.
