2 1/2  c.  zucchini, grated

1  -  egg, beaten

1/4  c.  onion, minced

1  c.  crushed crisp rice cereal

1  tsp.  southwest seasoning

1  c.  red bell pepper, diced

*  *  non-stick cooking spray


Using the grating attachment on a food processor or a box grater, shred zucchini.

Combine the remaining ingredients into a bowl.

Form the zucchini mixture into 8 patties place them on a foil lined sheet pan and refrigerate for 1 hour.

Heat a nonstick skillet over medium high-heat. Add in ? cup of canola oil.

Cook each patty for 3 to 4 minutes per side. Serve with marinara sauce.
