2 tbsp. canola oil
1/4 cup chopped onion
3 medium zucchini, chopped into 1/2-inch pieces
2 medium tomatoes, chopped
1 can (15 1/2 oz) HCF golden hominy, drained
2 teaspoon chili powder
Heat oil in a large skillet over medium-high heat.
Add onion and cook for 2-3 minutes or until golden brown.
Add zucchini, tomato, hominy, chili powder and 1/2 cup water.
Stir and cook for 5 minutes.
Season to taste with salt and black pepper.
Reduce heat to medium-low heat and continue to cook for 10 more minutes or until zucchini is tender, stirring occasionally
