1 lb.  eggplant

1   lb.  tomatoes

1   tsp.  red pepper flakes

1   tsp.  ground cumin

2   cloves  garlic, minced

*  salt


Wash eggplant and tomatoes. Cut into 1-inch cubes (approximately) and place in a small saucepan.

Add spices and cook on Medium-High heat about 20 minutes, stirring often. Add salt to taste. Can be served warm or cold.

Serve with a side salad.
