4 slices bacon
1/2 cup HEB Three Cheese Italian Dressing
1 tbsp. sugar
1/2 cup sliced mushrooms
6 to 8 cups fresh spinach, cleaned and torn into bite-size pieces
1 hard boiled egg, chopped
1/2 cup red onion, thinly sliced
Cook bacon over medium-high heat in a large skillet until crisp.
Drain and set aside.
Pour off grease.
Place dressing and sugar into same pan over medium heat.
Add mushrooms and cook for 1 minute while stirring.
Add spinach to the pan, tossing gently until it starts to wilt.
Divide evenly onto two medium salad plates.
Garnish with crumbled bacon, egg and onion
