• non-stick cooking spray
1 lb. boneless, skinless chicken breasts
1 c. portabello mushrooms, quartered
1/2 c. H-E-B Halved Artichoke Hearts, drained and patted dry
1 Tbsp. H-E-B Unsalted Butter
1/3 c. H-E-B Sundried Tomato Halves
1/2 c. Central Market Organics Low Sodium Chicken Broth
1 lemon, juiced
Bring large nonstick skillet to Medium heat. Spray with cooking spray and cook chicken 6-8 minutes on each side.
While chicken cooks, clean mushroom tops with a damp paper towel and cut into quarters.
When chicken is cooked through, transfer to a clean plate.
Reduce skillet heat to Low. Add butter and lightly sauté mushrooms, tomatoes, and artichokes until heated through, about 3 minutes. Add chicken broth and lemon juice.
Return chicken breast to skillet and allow sauce to reduce 2 minutes before serving.
