Watermelon Salsa Fresca with Coconut Sugar

Prep Time:

1 - 2  tsp.  finely chopped seedless watermelon

1/2   tsp.  finely chopped English cucumber

1/2  tsp.  finely chopped honeydew melon

1/4  tsp.  finely chopped red onion

1  jalapeno or serrano pepper, seeded and finely chopped

1/4  tsp.  minced fresh cilantro

1  tbsp.  minced fresh basil

1  tbsp.  minced fresh mint

1  tbsp.  coconut simple syrup*, honey or agave nectar

2  limes, juiced, (use zest from 1 lime for extra zing)


Mix all ingredients. Season with salt and pepper to taste (salt brings out all the flavors and pepper goes well with the melon), and chill at least 30 minutes to allow flavors to blend.

Watermelon Salsa Fresca keeps 2 to 3 days chilled.

*Coconut Simple Syrup Add 1/4 cup coconut or palm sugar and 1/4 cup water to a small saucepan, bring to a simmer or heat until sugar is melted. Cool and use in place of any sweetener.
