2  pounds  fresh green beans, ends trimmed

1/2  red onion

1/4  cup  vegetable oil

2  tablespoons  cider vinegar

1  teaspoon  Dijon mustard

1/4  teaspoon  salt

1/4  teaspoon  black pepper


Wash green beans and trim ends.

Leave whole or cut in half, if desired.

Add water to a 4-quart pot until 1 inch deep.

Place a steamer basket in bottom and fill with green beans.

Season with salt.

Bring water to a boil over medium heat; cover and cook 8 minutes, until crisp-tender.

Remove beans from pot immediately to stop cooking process.

Meanwhile, cut red onion in half lengthwise.

Lay flat-side down and cut into ΒΌ-inch thick slices.

Use remaining half for another meal.

Whisk dressing ingredients together in a medium serving bowl.

Toss green beans in dressing and serve
