sweet potatoes, 2 1/2 to 3 lb.

brown sugar (packed)

butter, melted
1 to 2
c.
fresh or frozen cranberries

c.
fresh-squeezed orange juice

For topping, combine:
1/2
c.
chopped walnuts

Tbsp.
melted butter

Tbsp.
brown sugar

tsp.
cinnamon
![]() Instructions ![]() Heat oven to 350°F. Coat a 9 x 13-inch baking dish with non-stick spray.
![]() Cook sweet potatoes in microwave until tender. Cool slightly, then peel and cut potatoes into 1/4 inch slices.
![]() Arrange half of potatoes in prepared dish; sprinkle 1/4 cup brown sugar over top. Drizzle with 2 tablespoons butter and top with half of cranberries.
![]() Layer remaining sweet potatoes, brown sugar, butter and cranberries over top. Pour orange juice evenly over casserole.
![]() Cover dish with foil. Bake 40 minutes; remove from oven and sprinkle walnut mixture over top. Return to oven and bake 5 or 10 minutes longer or until top is brown and bubbly.
