Veggie Carnitas Gorditas

6 gorditas


2  c.  instant corn masa flour

1 1/2  c.  warm water

1/4  c.  olive oil

1  tsp.  chili powder

1  tsp.  salt

1  (12 oz.) pkg.  Helen’s Kitchen Organic Veggie Carnitas

2  roma tomatoes, chopped

1  can  fat free refried beans

2  c.  shredded lettuce

1  large Hass avocado, diced


Preheat the oven to 400°F.

Combine corn masa, water, olive oil, chili powder and salt in bowl. Knead a couple of minutes. Place on a floured surface. Divide dough into 12 balls, place in a zipper bag to keep moist. Press each ball between wax paper into a 4-6 inch diameter rounds.

Place on prepared baking sheet. Spray gorditas with non-stick spray on both sides. Bake 12-15 minutes or until golden.

Heat veggie carnitas according to package directions

In a small microwave dish, heat the fat free refried beans.

Fill each gordita with refried beans, veggie carnitas, tomato, lettuce and avocado.
