1  Tbsp.  H-E-B Pure Olive Oil

1  medium  onion, chopped

1  poblano chile pepper, chopped

1  Tbsp.  minced garlic in oil

1  pkt. (1.25 oz.)  low-sodium chili seasoning mix

1  can (29 oz.)  crushed tomatoes

1  can each (15 -16 oz.):  black beans and red kidney beans

2  c.  frozen or canned corn

1  pkg. (12 oz.)  soy-based meat substitiute crumbles, optional


Heat oil in a 5 or 6-quart pot over medium-high heat. Sauté onion and pepper 3 minutes. Stir in garlic and chili mix; sauté 3 more minutes.

Stir in tomatoes. Bring to a boil; reduce heat to medium-low and simmer 10 minutes.

Rinse and drain beans. Stir beans and corn into chili; add meat substitute, if using. Return to a boil. Add 1 to 1 1/2 cups water, as desired, until chili reaches desired consistency. Simmer 5 more minutes, then ladle into bowls and serve while hot.
