4 each medium Russet potatoes
1 each egg
1/4 cup milk
1/2 teaspoon Each salt and pepper
1 to 2 tablespoons snipped fresh chives
3/4 cup shredded fresh parmesan or cheddar cheese
Scrub potatoes under running water with a vegetable brush.
Pierce potatoes a few times with a knife or fork.
Microwave on High 9 to 12 minutes, turning and rotating every 3 minutes until potatoes feel soft when squeezed.
Beat egg, milk, salt, pepper and chives until blended.
Remove top one-fourth of potato with a knife.
Scoop potato from center with a spoon leaving a thin wall at least 1/4-inch thick.
Mash or beat potato with milk mixture until smooth.
Fold in cheese until evenly distributed.
Fill potato shells with mashed potatoes.
Microwave stuffed potatoes on High 5 minutes.
Garnish with snipped chives if desired and serve
