1  pkg. (16 oz.)  H-E-B Pasta, any variety

1  Tbsp.  H-E-B Olive Oil

1  small  red onion, diced

1  zucchini, diced

1  can (15 oz.)  H-E-B Fire Roasted Diced Tomatoes

1  can (15 oz.)  H-E-B Great Northern Beans, drained and rinsed

1  jar (4.6 oz.)  H-E-B Quartered Marinated Artichoke Hearts, drained

1  Tbsp.  Italian seasoning

3  Tbsp.  ripe olives, diced


Bring 6 cups of well-salted water to a boil; cook pasta according to package instructions; drain and set aside.

Meanwhile, heat oil in a large skillet on Medium-High heat; add onion and sauté 2 minutes. Add zucchini and saut´ 4 minutes. Add tomatoes, beans, artichokes and seasoning; stir.

Add pasta and olives to skillet; toss to combine.
