2 packets cornbread mix (plus eggs and milk listed on packets)
1 lb. lean ground turkey
1 packet H-E-B Low-Sodium Taco Seasoning Mix
1 can of each: black beans and corn kernels, drained
1 can diced tomatoes with green chiles, drained
1 can (8 oz.) tomato sauce
1 1/2 c. shredded colby jack cheese, divided use
Heat oven to 425°F. Prepare cornbread mix according to package directions; set aside.
Brown turkey in a large, ovenproof skillet over medium-high heat. Add seasoning mix, cook 3 more minutes. Stir in beans, corn, tomatoes, (drained) tomato sauce and 1 cup cheese. Boil and simmer 5 minutes; remove from heat.
Pour cornbread mixture over top; sprinkle with remaining 1/2 cup cheese. Bake 15 to 20 minutes, or lightly browned and firm in the center when touched. Serve with a spoon.
