* giblets and neck from turkey
1 celery stalk
1 teaspoon salt
1/2 teaspoon pepper
6 cups water
Cut carrot, celery, and onion into large pieces.
Place ingredients in a large stockpot. Bring to a boil over High heat, reduce heat to Low and simmer 2 hours while turkey roasts.
Strain stock, reserving giblets and neck for use in gravy or dressing recipes.
