2 cups dry navy, white, or great northern beans
1 cup chopped celery
1 cup chopped onion
2 cloves peeled and chopped garlic
3 (14 1/2 oz.) cans chicken broth
1 (14 1/2 oz.) can whole or diced tomatoes
1 (4 1/2 oz.) can chopped green chilies (optional)
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon black pepper
1 to 2 cups cooked, diced turkey
1/4 cup chopped fresh cilantro (optional)
Place dry beans and 8 cups water in a large soup pot over high heat.
Bring to a boil, remove from heat and set aside to soak for 1 hour.
Drain and rinse.
Add remaining ingredients, except for turkey and cilantro.
Bring to a boil; cover, reduce heat and simmer for 1 hour.
Add turkey and cook an additional 20 minutes or until beans are tender.
Garnish with cilantro
