1/2 c. low fat sour cream
2 Tbsp. chipotle in adobo sauce, blended
1 lemon, juiced
* salt and pepper, to taste
2 Tbsp. canola oil
4 (4 oz.) individually frozen ahi tuna steaks
1 medium onion, diced
3 roma tomatoes, chopped
8 (6 inch) whole wheat tortillas
In a small mixing bowl blend sour cream, chipotle, and lemon juice. Salt and pepper as needed. Cover and chill.
Place a large sauté pan over Medium-High heat. Add oil.
Slice tuna steaks into 1/2 inch thick pieces. Salt, pepper, and sear in hot pan 30 seconds on each side. Remove tuna to a plate.
Serve tuna with onion, tomatoes, chipotle sour cream, and warm tortillas.
