Tuna Salad in Tomato Half

2  medium  tomatoes

1  can (6 oz.)  H-E-B Albacore Tuna packed in water, drained & flaked

1  celery rib, chopped finely

1  jar (2 oz.)  H-E-B Harvest Moon Diced Piminetos, drained

1/4  c.  H-E-B Fat Free Sour Cream

1/2  c. chopped  cucumber

1/4  c.  Hill Country Fare Sweet Pickle Relish


Cut each tomato in half and scoop out the pulp. Chop the pulp and place in a large mixing bowl. Set the tomatoes on a plate, cover with plastic wrap and refrigerate.

Add the flaked tuna, chopped celery, drained pimientos, fat free sour cream, chopped cucumber and sweet pickle relish to the tomato pulp. Season the mixture with salt and pepper to taste. Divide the mixture evenly with and stuff each tomato half. Serve chilled.
