1 can (12 oz) albacore tuna in spring water, drained
4 hard cooked H-E-B Eggs, peeled and chopped
3 celery ribs, chopped finely
1 jar (2 oz) diced pimientos, drained
1/2 cup mayonnaise, regular low fat or fat free
1/4 cup sweet or dill pickle relish (optional)
Combine all ingredients in a large mixing bowl and toss to coat.
Season to taste with salt and pepper.
Cover with plastic wrap and chill for 30 minutes or more.
