1 can (40 oz.) Sweet potatoes drained and mashed
3/4 cup Drained hill country fare crushed pineapple
1/4 cup each: H-E-B brown sugar & H-E-B Orange Juice
1/4 cup each: Hill Country Fare raisins* shredded coconut & pecan pieces
1 to 2 tsp Pumpkin pie spice
1 tsp salt
Heat oven to 350F. Spray a 2-quart casserole dish with non-stick cooking spray.
In a large bowl combine mashed sweet potatoes, pineapple, brown sugar, orange juice, raisins,coconut, pecans, pumpkin pie spice and salt.
Pour the sweet potato mixture into the prepared casserole dish and bake for 30 minutes.*Option: use half RAISINS and half dried CRANBERRIES
