1 8 oz. bag Fresh Express® Riviera Salad Blend
1 5 oz. bag Fresh Express® Spring Mix
2/3 c. dried cranberries
2/3 c. chopped dried apricots
1/3 c. chopped chives
4 oz. goat cheese crumbles, optional
* Orange Vinaigrette Dressing:
1 orange, for juice & zest
2 Tbsp. red wine vinegar
2 Tbsp. extra-virgin olive oil
2 Tbsp. honey
2 tsp. Dijon mustard
2 tsp. McCormick Poppy Seeds
For dressing, grate orange peel on the fine edge of the grater to make 2 teaspoons zest; avoid the bitter white pith. Cut orange in half; squeeze to make 1/4 cup juice. Whisk orange zest and juice with remaining dressing ingredients in a large salad bowl.
Chop apricots and chives; place apricots, chives and cranberries in dressing to soak at least 10 minutes.
Right before serving, add salad greens to serving bowl; toss with dressing, dried fruit and chives. Sprinkle with cheese, if desired. Serve immediately.
