Tortilla Stacks

12  Mission corn tortillas

1  (12 ounce) package  H-E-B Fully Cooked Taco Beef Crumbles

1/2  cup  onion, chopped

1  (14.5 ounce) can  Hunt's diced tomatoes with green chiles, drained

1  (15.5 ounce) can  Rosarita refried beans

1  (8 ounce) bag  shredded H-E-B Monterey Jack cheese


Heat a large skillet over high heat for 3 minutes.

Add 1/2 cup Wesson oil and fry tortillas, one at a time, for a few seconds on each side to soften.

Drain fried tortillas on paper towels and set aside.

Place H-E-B fully cooked taco crumbles in a large microwave-safe bowl according to package directions.

Add the tomatoes to the beef crumbles; stir and set aside.

Spray a 9 x 13-inch baking pan with non-stick cooking spray.

Spread each fried tortilla with 3 tablespoons refried beans.

Place the first two tortillas on the bottom of the prepared baking dish.

Sprinkle each tortilla with 1/3 cup shredded cheese.

Place the second layer of tortillas over the cheese and top each one with 1/3 cup beef and tomato mixture.

Continue with two more layers of tortillas ending up with the beef mixture.

Sprinkle the remaining cheese over the two tortilla stacks.

Spray one side of plastic wrap with non-stick cooking spray and cover casserole.

Heat in microwave oven on Medium power for 10 minutes.

Serve with salsa and sour cream
