4  H-E-B Bake Shop 100% Whole Wheat Thin Rounds

8  Tbsp.  roasted red pepper hummus

2  ripe tomatoes, sliced

2  cloves garlic, minced

1  lemon, juiced

1  Tbsp.  olive oil

1  pkg. (5 oz.) Central Market Organics Power Greens

1  cucumber, sliced

1/2  red onion, sliced thinly

1  bunch basil, chopped

2  oz.  crumbled feta

1/2  tsp.  each salt & black pepper


Toast each thin round. Spread 1 Tbsp. of hummus on each toasted round. Top with sliced tomato. Divide among 4 dinner plates. Set aside.

Make vinaigrette: In a small resealable container (like a small jar) combine garlic, lemon juice, and olive oil. Shake vigorously and set aside.

Place mixed greens, cucumber, sliced onion, basil, and a bit of feta on top of toast and tomato slices.

Drizzle lightly with vinaigrette, and season with salt and pepper.
