1  lb.  pencil thin Asparagus, rinsed, trimmed and cut into 1-inch pieces

6  slices H-E-B Fully Cooked Bacon, heated or Central Market Uncured Bacon, cooked

1  pkg. Angel Sweet Cherry Tomatoes, halved

1  tsp.  fresh or 1/2 tsp. dry Thyme

1  Tbsp.  Ottavio Olive Oil

*  Borgo de Medici Truffle Salt, to taste

1  baguette, sliced


Microwave asparagus 1 minute. Finely dice bacon.

Combine asparagus, bacon, tomatoes, thyme and oil in a large bowl. Sprinkle with truffle salt and rest 10 minutes to blend flavors. Taste, and add more truffle salt if needed.

Serve as a salad or on toasted bread for a light appetizer.
