2 to 4 tart, green-skinned apples
3 tablespoon lime juice
1 pound jicama
8 tomatillos, each about 1 1/2 -inch in diameter
10 lettuce leaves
1/4 cup fresh cilantro leaves, snipped
* Salt to taste
Wash and core apples and cut each into 1/4 inch cubes.
Place apple cubes in a bowl with lime juice.
Toss to coat apples.
Wash and peel jicama; cut into match stick slices.
Husk and wash tomatillos; cut into 32 slices or chop coarsely.
On lettuce leaf, arrange apple, jicama and tomatillos.
Sprinkle with cilantro leaves.
Arrange on a platter.
Sprinkle with remaining lime juice and salt
