Yields 2 cups
1/2 teaspoon salt
2 tablespoons butter
2 cups pumpkin seeds
Wash seeds thoroughly. Then spread on a paper towel and allow to dry for a day or two.
Preheat oven to 300 degrees F.
Melt butter in sauce pan. Then add salt and seeds and toss to coat seeds with mixture.
Spoon and spread seeds onto a cookie sheet, spreading to a single layer deep.
Bake for 40 minutes, stirring every ten minutes. Bake until seeds are lightly browned and crisp.
Remove from oven and allow seeds to cool. Enjoy now or store seeds for later in an airtight container
