2 pounds chicken legs & thighs
2 tablespoons olive oil
1 pouch (16 oz.) H-E-B Fresher Lasting Chipotle, Cilantro or Ranchera Cooking Sauce
1/4 cup cilantro, chopped
1/4 cup shredded H-E-B Cotija Cheese, Asadero Cheese or Queso
* fresco cheese, crumbled
Trim fat and skin from legs & thighs. Toss the chicken legs and thighs in olive oil and season to taste with salt and pepper. Heat a large heavy skillet over high heat for 3 minutes. Add thighs and drums and brown on all sides.
Pour H-E-B Fresher Lasting Cooking Sauce over browned thighs and legs and bring the sauce to a boil; reduce the heat to medium low. Cover the skillet and cook the chicken for 45 minutes or until chicken reaches an internal temperature of 170°F from the thickest thigh or when the juices run clear.
Place chicken in a serving dish and top with chopped cilantro and crumbled cheese.
