1/2 cup Extra virgin olive oil
1/4 cup white wine vinegar
1 teaspooon Dijon mustard
1 bag (16 oz.) H-E-B steamable prince edward medley frozen vegetables (thawed and chilled)
1 container (7 oz.) H-E-B Ready, Fresh Go! Three color peppers
2 slices H-E-B Ready, Fresh, Go! Sliced red onion coarsly chopped
2 tablespoons Each chopped fresh basil, dill parsley and mint
In the bottom of a mixing bowl combine the olive oil, vinegar and Dijon mustard and season well with salt and pepper.
Add the thawed vegetables, peppers and red onion. Toss, adjust seasoning and chill until serving time.
To prevent discoloring, add herbs right before serving.
