1 1/2 pounds H-E-B cilantro lime chicken breast
1 10 ounce bag Spring salad greens
1/4 cup basil
1/4 cup mint
1/4 cup cilantro leaves
1/4 cup Hill Country Fare fried onions
1/4 cup chopped peanuts
2 cups rice noodles
1 package peanut sauce mix
1 14 ounce can lite coconut milk
Grill or pan fry H-E-B cilantro lime chicken breast and thin slice; set aside.
Layer spring salad greens, basil, mint, cilantro, fried onions, peanuts and rice noodles in a large salad bowl. Toss salad lightly to combine. Add thin sliced chicken and toss lightly. Cover with plastic wrap and refrigerate until ready to serve.
Prepare peanut sauce according to package directions. Serve salad with peanut sauce.
