Thai Shrimp and Noodles

1  lb.  H-E-B New Harvest Gulf Shrimp

4  green onions, chopped

⅓  c.  each: fresh chopped cilantro, basil, and mint leaves

1  Tbsp.  peanut oil and sesame oil

1/2  c.  Central Market Organics™ Satay Sauce

1/2  (16 oz.) pkg.  Central Market Organics™ Whole Wheat Spaghetti or Central Market Organics™ Cappelini Pasta

1/4  c.  chopped H-E-B SnaX Hot & Spicy Peanuts


Peel and devein shrimp, slice each in half lengthwise, and set aside.

Combine green onion, cilantro, basil, and mint in a small bowl and set aside.

Prepare pasta according to package directions and drain.

While pasta is cooking, heat a large skillet over high heat for 3 minutes. Add peanut and sesame oils and shrimp. Stir-fry shrimp for 2 to 3 minutes and set aside.

Combine pasta, shrimp, satay sauce, and green onion mixture in a large pasta bowl and toss. Top with chopped peanuts and serve hot.
