1 can (14.75 oz.) Honey Boy Salmon, drained
1/2 cup H-E-B Ready, Fresh Go!® Chopped Onion & Bell Pepper
2 large Hill Country Fare Eggs, beaten
2/3 cup Hill Country Fare Plain Bread Crumbs
1 Tbs Hill Country Fare Louisiana Hot Sauce
1/2 cup canola oil for frying patties
Remove any visible bones from salmon. Combine the drained salmon, chopped onion & bell pepper, eggs, bread crumbs and hot sauce in a mixing bowl. Shape the salmon mixture into 8 patties the size of hamburger patties. Place on a baking sheet, cover and refrigerate until ready to fry.
Add oil to a large skillet and heat for 3 minutes over medium heat. Fry 3 to 4 patties at a time 2 to 3 minutes per side. Place on paper towels to drain and serve.
