1 Tbsp. H-E-B Extra Virgin Olive Oil
1 lb. H-E-B 96% Lean Ground Beef or 99% Ground Turkey
1 yellow onion, diced
1 green bell pepper, diced
1/2 tsp. H-E-B Kosher Salt
1/4 tsp. black pepper
1 tsp. chili powder
1 Central Market Bay Leaf
1 tsp. cumin
1 can (15 oz.) H-E-B Kidney Beans, No Salt Added
1 can (15 oz.) H-E-B Mexican Style Tomatoes
13 oz. H-E-B Reduced Sodium Beef Broth
1 c. low sodium tomato juice
1 tsp. chili garlic sauce, optional
Heat a large pot over High heat 2 minutes. Add oil and ground beef or turkey, and sauté 5 minutes until liquid is gone and meat is browned.
Add onion, bell pepper, salt, black pepper, chili powder, bay leaf and cumin. Sauté 3 more minutes.
Add beans, tomatoes, broth, and tomato juice. Bring to a boil, reduce heat to a simmer and cook 15 minutes. Add chili garlic sauce for a spicy version, if desired. For a richer flavor and thicker texture, simmer 1 hour.
