Texas Shrimp Jalapeño Cilantro Slaw

4  c.  fine shredded green cabbage

1  medium  carrots, shredded

1  c. chopped  tomato

1/4  c. chopped  cilantro

2  jalapeño peppers, seeded and chopped

1/4  c. chopped  red onion

2  c.  Hill Country Fare Frozen Cooked Salad Shrimp

1  c.  H-E-B Shredded Fat Free Mozzarella Cheese


1  Tbsp.  H-E-B Olive Oil

*  juice of 1 lime

1  tsp.  Hill Country Fare 0 Calorie Sweetener

2  Tbsp.  H-E-B Texas Twist Serrano Ranch Dressing


Combine cabbage, carrots, chopped tomato, cilantro, chopped jalapeño pepper, chopped red onion and cooked shrimp in a large salad bowl and set aside.

Combine olive oil, lime juice, sweetener and Serrano ranch dressing in a small bowl; stir well and keep refrigerated until ready to serve salad.

Cover salad with plastic wrap and chill for 15 minutes or until ready to serve. Before serving, add the dressing, season to taste with salt and pepper and toss.
