Texas Fried Onion Flower Wedges

2  Large Texas sweet onions or vidalia onions

1 1/2  cups  H-E-B all-purpose flour

1/2  cup  Hill Country Fare cornmeal

2 1/2  teaspoons  Hill Country Fare fajita seasoning

2  cups  H-E-B Buttermilk

1  quart  Hill Country Fare Canola Oil for frying


Peel onions and cut each onion into 12wedges. Leave each onion wedge attached atits root. Soak the onion wedges in cold waterfor 1 to 2 hours until each wedge fans out and separates its layers. Drain the onion wedges and place on paper towels.

Combine flour, cornmeal and fajita seasoningin a bowl. Pour buttermilk into a separate bowl. Heat the Hill Country Fare Canola Oil in an electric fryer to 375F. Dip the onion wedge into the buttermilk and then into the flour mixture. Shake off excess flour and drop into the hot oil. Fry 4 to 5 wedges at time for 3 minutes until golden. Drain the fried onion on paper towels. Enjoy the Texas Fried Onion Flower with your favorite grilled steak or chicken
