Tarragon-Baked Tilapia

1  pound  tilapia fillets

*  salt and ground black pepper

1/2  cup  reduced-fat mayonnaise

2  teaspoons  course ground mustard

1/2  teaspoon  dried tarragon leaves

1  tablespoon  dry bread crumbs


Heat oven to 450 degrees. Spray a large baking pan with non-stick cooking spray.

Lay fish in baking pan. Season both sides lightly with salt and pepper.

For topping, combine mayonnaise, mustard and tarragon in a small bowl. Spread over tops of fillets. Sprinkle with dry breadcrumbs.

Bake fillets 6 to 8 minutes, or until fish turns from translucent to opaque (white) and just begins to flake with a fork. Remove from oven and serve immediately.
