1 sandwich


14  oz.  extra firm tofu, cut into 8 1/2 inch pieces

1/3  c.  salsa verde

1  clove  garlic, minced

10  oz.  low sodium refried black beans

4  soft sandwich rolls

1  c.  shredded iceberg lettuce

1/4  c.  pickled jalapenos

1/2  c.  queso fresco


Slice tofu and place between 2 sheets of paper towels. Gently press tofu until paper towels are soaked through. Discard paper towels.

Place half of salsa verde in the bottom of a baking dish. Lay tofu in a single layer on top of salsa. Cover with garlic and remaining salsa verde.

Marinate 1 to 24 hours in the refrigerator.

Spray grill with non-stick spray. Preheat grill to Medium.

Drain salsa verde from tofu and pat dry with paper towels. Grill 2 to 3 minutes per side or until nicely browned.

While tofu is grilling, heat black beans in a microwave safe bowl 2 to 3 minutes or until heated through.

Assemble each sandwich by layering tofu, beans, lettuce, jalapeƱos and queso fresco.
