Taco Fiesta Surprise Salad

1  Tbsp.  Hill Country Fare Canola Oil

1  tube (16 oz.)  H-E-B Ground Turkey Breast

2  Tbsp.  Hill Country Fare Chili Powder

1/2  head  lettuce, shredded

1/2  c.  chopped cilantro

1 1/2  c.  chopped tomatoes

1  c.  H-E-B Fat Free Shredded Cheddar Cheese

4  H-E-B Baked Tostadas


Heat a heavy bottom skillet over medium heat for 2 minutes. Add the canola oil and ground turkey and stir-fry until the meat is browned. Add chili powder and 1/2 cup water and bring to a boil, reduce the heat to low and cook for 5 minutes. Season to taste with salt and pepper if desired.

Combine the shredded lettuce, cilantro, tomatoes and cooked turkey in a salad bowl; toss gently to mix. Top each taco salad with 1/4 cup shredded cheese and one baked tostada.
