1 pound lean ground beef
1 packet (1.25 oz) taco seasoning mix
1 egg, beaten
3/4 cup milk (whole, low fat or fat free)
1 can (15 oz) HEB Cream Style Corn
1 package (6 oz) cornbread mix
Heat oven to 400 degrees.
Spray a 2 quart baking dish with non-stick cooking spray; set aside.
Heat a skillet over high heat and cook ground beef until crispy brown.
Drain the fat from the meat.
Add taco seasoning mix and 3/4 cup water to beef; stir to combine.
Reduce heat to medium-low heat and cook for 1 more minute.
Evenly spread cooked beef in prepared baking dish and set aside.
Combine egg, milk, corn and cornbread mix in a medium-size bowl.
Pour batter over ground beef mixture.
Bake for 30 minutes or until golden brown
