Sweet Potato & Black Bean Chili

4 servings of 1 cup


2  tsp.  H-E-B Olive Oil

1  small yellow onion, finely diced

2  large sweet potatoes, peeled and diced

2  cloves garlic

1  Tbsp.  chili powder

2  tsp.  ground cumin

1/2  tsp.  salt

1  can (15 oz.) H-E-B Black Beans, rinsed and drained

1  c.  canned H-E-B Diced Tomatoes

2  tsp.  lime juice

2  Tbsp.  cilantro, chopped


Heat oil in a large saucepan over Medium-High heat.

Add onion, potatoes, garlic, and seasonings; sauté stirring often, about 4 minutes.

Add 1 cups water, bring to a boil, cover, reduce heat to maintain a gentle simmer and cook until potatoes are tender, about 10 minutes.

Stir in beans, tomatoes and lime juice, and return to a boil. Reduce heat and simmer 5 minutes. Remove from heat; garnish with cilantro.
