1  lb.  sweet potatoes

2 1/2  c.  H-E-B The Baker's Scoop Whole Wheat All Purpose Baking Mix

2  tsp.  baking powder

1/2  c.  green onions, chopped

1/2  tsp. each:  Central Market Organics Ground Cayenne Pepper and Ground Korintje Cinnamon

3  Tbsp.  H-E-B Extra Virgin Olive Oil

1/4  c.  H-E-B Brown Sugar

1/4  c.  H-E-B Buttermilk


Heat oven to 425°F. Line two baking sheets with parchment paper, set aside. Microwave sweet potatoes on high power 5 minutes or until soft. Peel. Mash with fork (makes about 2 cups).

Combine cooked potatoes, baking mix, baking powder, green onions, cayenne pepper and cinnamon in food processor bowl. Process 10 seconds. Add olive oil, brown sugar and buttermilk. Process 5 seconds.

Place dough on fl oured surface, roll out to 1/2-inch thickness. Use 2-inch biscuit cutter or favorite holiday 2-inch cutter. Place biscuits on prepared baking sheets. Bake 12 minutes or until golden brown.
