1 tablespoon canola oil
4 green onions, chopped
2 cups instant long grain rice
8 frozen Hill Country Fare Flounder Fillets, thawed
1/2 c. vietnameese sweet chili sauce
Heat a skillet over high heat for 2 minutes. Add oil and chopped green onions and stir-fry for 2 minutes. Add instant long grain rice and stir-fry one more minute. Add 2 cups water and bring rice mixture to a boil. Cover, reduce heat to low and cook for 10 minutes.
Heat oven to 425 degrees F. Line a large baking sheet with foil and spray with non-stick cooking spray; set aside.
Arrange thawed Hill Country Fare Flounder fillets on the prepared baking dish. Brush each fillet with 2 Tablespoons sweet chili sauce. Bake fish on lower oven rack for 8 to 10 minutes or until fish flakes easily.
Spread cooked rice on a large serving platter and arrange baked sweet chili flounder over rice. Serve hot.
