Sweet Buttermilk Cornbread

1  H-E-B Kitchen & Table 10.2" Enamel Cast Iron Fry Pan

1/4  c.  H-E-B Extra Light Olive Oil

1 1/2  c.  Hill Country Fare Cornmeal

1/3  c.  H-E-B The Baker's Scoop Soft Wheat Flour

2  tsp.  Hill Country Fare Baking Powder

1 1/3  c.  H-E-B Buttermilk

1/3  c.  H-E-B Sugar or Hill Country Fare 0 Calorie Sweetener

1  large egg, beaten


Heat oven to 450°F. Add 1 tablespoon olive oil to the fry pan. Place in oven and heat for 10 minutes.

Meanwhile, combine remaining olive oil, cornmeal, flour, baking powder, buttermilk, sugar and egg in a mixing bowl.

Use a potholder to remove fry pan from oven. Pour cornbread batter into the hot pan and bake on center oven rack for 15 minutes or until lightly browned. Cornbread is done when a toothpick inserted in the center comes out clean. Serve with your favorite salsa or butter.
