1   pounds  large gulf shrimp, peeled & deveined

1   tsp.  ground cumin

1   tsp.  chili powder

1   teaspoon  sugar

1   tablespoon  garlic, minced

2   tbsp.  olive oil

1   bag (16 oz.)  frozen edamame, shelled

1   cups  frozen corn

1/2  small  onion, chopped

1   small  bell pepper, diced

*  nonstick cooking spray


Combine the first 5 ingredients in a shallow dish and toss to combine. Set aside.

Heat oil in a large skillet on Medium-High. Add edamame, corn, onion, and bell pepper. Saut? until thawed and onions begin to brown. Transfer to a bowl.

Wipe the skillet with paper towels. Spray with nonstick spray, add shrimp, and cook 3 minutes, turning once.

Add to sauted vegetables. Toss to combine.

Serve warm or cold.
