1 box (8.5 oz.) Hill Country Fare Corn Muffin Mix
4 Tbsp. H-E-B Salted Butter, melted
1/2 cup H-E-B Sour Cream, regular, light or fat free
1 1/4 egg
1 Tbsp. sugar
Preheat oven to 400°F.
Combine all ingredients in a mixing bowl and mix until egg and sourcream are incorporated, do not over mix.
Allow batter to rest for 10 minutes.
Butter an 8x8 inch baking dish and add batter. Bake until corncake is golden brown.
